You’ve seen them everywhere. Bright, pastel-colored cans promising better gut health in every sip. Poppi, Olipop, GT’s Alive — the probiotic soda market is projected to hit $6.5 billion by 2028. Every influencer is holding one. Every label says “supports digestive health.” But here’s the thing nobody’s putting on the can: most of those probiotics are dead before they reach your stomach.

What’s actually happening

Your gut microbiome is a living ecosystem — trillions of bacteria that regulate inflammation, produce vitamins, metabolize hormones, and communicate with your brain through the vagus nerve. When you consume genuinely probiotic foods, you’re introducing live organisms that can temporarily colonize this ecosystem and shift its balance in your favor.

A 2023 study in PLoS One tested what happens to probiotics inside carbonated beverages. The researchers found that the combination of carbonation, low pH, and dissolved CO₂ significantly reduces probiotic viability — meaning most of the bacteria in your probiotic soda are dying in the can, not thriving in your gut (Tan et al., 2023 — https://pubmed.ncbi.nlm.nih.gov/37000797/). Alginate encapsulation helped improve survival rates, but standard probiotic soda formulations don’t use this technology.

The math is brutal: a typical probiotic soda contains 1–2 billion CFU (colony-forming units) at the time of manufacturing. But if carbonation kills 90–99% of those organisms before you drink them, you’re getting somewhere between 10 million and 200 million CFU — at best. For context, a serving of quality kefir delivers 20–30 billion CFU, and those organisms are already adapted to an acidic, fermented environment.

Why this is happening to you specifically

You’re doing everything right. You’re reading labels. You’re trying to make better choices. And the wellness industry knows that — which is why it’s spending billions to make you feel like a $4 can of flavored sparkling water is a health decision.

The probiotic soda market isn’t built on gut health research. It’s built on the anxiety of women who’ve been told their gut is the root of every problem they have. Hormones? Gut. Sleep? Gut. Weight? Gut. And they’re not entirely wrong — the gut really does influence all of those systems. But the solution isn’t in a can from the convenience store.

In 2024, Poppi settled an $8.9 million class-action lawsuit over claims that its sodas provided meaningful gut health benefits. The lawsuit argued that the amount of prebiotics in each can (around 2 grams of inulin) was too low to deliver the gut health benefits the marketing implied. Poppi didn’t admit wrongdoing, but they paid — and quietly adjusted some of their language.

That’s the pattern: aggressive gut health marketing, backed by just enough real science to sound credible, delivering a product that’s closer to a lightly flavored seltzer than a therapeutic intervention.

What you can do today

1. If you like the taste, drink it — just don’t count it as a probiotic. Probiotic sodas are fine as a soda alternative. They’re lower in sugar than regular soda, and some contain prebiotic fiber. But they are not a replacement for genuinely probiotic foods.

2. Eat real fermented foods. The evidence for fermented foods and microbiome diversity is strong and getting stronger. A Stanford study found that a high-fermented-food diet increased microbiome diversity and reduced markers of inflammation over 10 weeks — more than a high-fiber diet alone. Kefir, kimchi, sauerkraut, yogurt with live cultures, miso, and tempeh all deliver live organisms that are adapted to survive your stomach acid.

3. Read the CFU count — and the survival rate. If a product doesn’t tell you how many CFU survive to your gut, the number on the label is meaningless. Look for products that use delayed-release capsules or strains specifically tested for acid resistance (Lactobacillus rhamnosus GG, Saccharomyces boulardii).

4. Feed the bacteria you already have. Prebiotics — the fiber that feeds your existing gut bacteria — may be more important than adding new ones. Garlic, onions, leeks, asparagus, bananas, and oats all contain prebiotic fibers that support the bacteria already doing the work. What to stop doing

Stop equating “probiotic” with “healthy.” The word has been co-opted by marketing. A probiotic cookie is still a cookie. A probiotic soda is still a soda. The presence of bacteria doesn’t automatically make something good for your gut — especially if those bacteria are dead on arrival.

Stop chasing convenience over evidence. A $4 can of probiotic soda is easy. A jar of sauerkraut that costs $5 and lasts two weeks is harder — but it actually works. Your gut doesn’t care about convenience. It cares about live organisms and the fiber to feed them.

Stop trusting the label without the data. “Supports digestive health” is a marketing claim, not a clinical finding. If a product hasn’t been tested in a peer-reviewed study showing that its specific formulation delivers live probiotics to the colon, the claim is aspirational at best.

What we still don’t know

But we don’t yet have long-term data on whether regular consumption of these products — even with improved formulations — actually shifts microbiome composition in a meaningful way. The gap between “contains live bacteria” and “improves your gut health” is still wide, and most brands are selling you the bridge before it’s built.
